Pine needle tea is a traditional vitamin C source with a genuine shikimic acid content — but the species you use decides whether it's a pleasant infusion or a medical emergency. Yew (Taxus) is a visually similar evergreen that is toxic in every part, and ponderosa pine contains isocupressic acid, documented to cause abortion in cattle. Eastern white pine (Pinus strobus) and other white pines are the species most commonly used for tea. Avoid: ponderosa pine and lodgepole pine, both of which contain compounds associated with toxicity.

Never use: yew (Taxus species). Yew is not a pine at all, but its flat evergreen needles read as "pine-ish" to an untrained eye. Every part of the plant contains taxine alkaloids. Ingestion can cause vomiting, weakness, confusion, slowed heart rate, and death. There is no safe culinary quantity.

Some cedar and cypress species also carry volatile oils that cause nausea, vomiting, and diarrhoea. The practical rule is simple: if you cannot name the species with certainty, don't brew it.

How to Tell Pine from Yew

The distinction is learnable and worth learning.

Pine needles grow in bundles — fascicles — of two, three, or five, wrapped at the base by a papery sheath. Eastern white pine has five needles per bundle. Pines produce woody cones.

Yew needles attach singly and directly to the twig, arranged flat along either side. There's no bundle and no sheath. Instead of a woody cone, yew produces a soft red berry-like aril with a single seed.

Bundled needles with a sheath means pine. Single flat needles with red berries means yew — walk away.

Vitamin C: The Best-Supported Benefit

Content varies by species, season, and needle age, so no reliable per-cup figure exists. Treat it as a modest contribution rather than a substitute for dietary vitamin C.

What Shikimic Acid Actually Is

Here's where most content overreaches. Researchers at the University of Maine found that pine needles steeped in hot water readily release shikimic acid, and shikimic acid is indeed the starting material from which the antiviral drug oseltamivir (Tamiflu) is synthesised.

Those two facts are true and get combined into a conclusion that doesn't follow.

Shikimic acid is also present in star anise, which is where commercial oseltamivir production historically sourced it. Its presence in a plant tells you the plant contains a useful industrial precursor. It doesn't tell you the plant is antiviral.

Other Traditional Uses

Pine needle infusions have been used traditionally as a warming winter drink, for respiratory comfort, and as a mild expectorant. The aromatic terpenes responsible for the scent are the presumed basis, and steam inhalation from a hot cup delivers them directly.

Pine needles also contain polyphenols with antioxidant activity in laboratory testing. As with most plant antioxidant findings, laboratory activity is a long way from a demonstrated clinical outcome, and no meaningful human trials support specific health claims for pine needle tea.

Enjoy it as a pleasant traditional beverage with a modest vitamin C contribution. That's an honest description of what it is.

How to Make Pine Needle Tea

Use roughly a tablespoon of chopped needles per cup. Snip them into short lengths to increase surface area.

Pour water just off the boil over the needles and steep covered for 10–20 minutes. Avoid a hard rolling boil, which drives off the aromatic compounds and can make the result harsher. Strain and drink; honey suits it well.

The flavour is resinous and citrus-adjacent, closer to rosemary than to green tea. Fresh spring growth is milder and brighter than older needles.

Who Should Avoid Pine Needle Tea

  • Pregnant women — this is the most important caution. Isocupressic acid in ponderosa pine is a documented abortifacient in cattle, and the needles of several conifers have been linked to pregnancy loss in livestock (Stegelmeier et al., Vet Pathol, 1996). Species identification in a home preparation is rarely certain enough to accept that risk.
  • Anyone breastfeeding — no safety data.
  • Anyone who cannot positively identify the species — including needles gathered from ornamental or landscaped plantings, where yew is common.
  • People with conifer or pine pollen allergies.

Keep in mind that pine needles gathered near roads, treated hedges, or sprayed amenity planting carry contamination risk independent of species.
