Chaga is not a cap-and-stem mushroom — it is a sclerotium, a dense woody mass that grows on living birch. That structure is why it cannot simply be steeped like tea leaves and needs extended heat to give anything up.Simmer 3–5 g of chunks in roughly a litre of water at 60–80°C for at least an hour; longer is better, and some people keep a pot going for several hours. The liquid darkens to a deep reddish-brown resembling strong black tea, with a mild, earthy, faintly vanilla-like flavour and none of Reishi's bitterness.
Avoid a hard rolling boil. Sustained high heat degrades some of the compounds you are trying to extract, which is why traditional preparation is a long, low simmer rather than a fast boil. Chaga chunks are unusually economical here — the same pieces can be re-simmered four or five times before they are spent, so a bag lasts far longer than the weight suggests. Identifying Quality Chaga Chunks
Genuine wild Chaga has a black, cracked, charcoal-like exterior and a distinctly orange-brown interior. That colour contrast is the first thing to check — uniformly brown material throughout suggests something other than properly harvested birch Chaga.Host species matters. Chaga draws betulin and betulinic acid from the birch it grows on, so birch-grown material is the standard and Chaga from other host trees does not carry the same profile. Cultivated Chaga grown on artificial substrate likewise does not develop the same compound profile, which is why we do not sell it. Our chunks are wild-harvested and sustainably collected — conks are never taken whole, so the remainder can regrow.
Storing Chaga Chunks
Store in a cool, dry place away from direct sunlight. Dryness is the thing to take seriously: as a dense, porous woody material, Chaga readily absorbs moisture from humid air, and damp chunks can develop mould. A breathable paper bag or a sealed jar with a desiccant both work; sealed plastic with any residual moisture does not.Properly stored, chunks keep for two years or more. Whole chunks keep considerably better than pre-ground powder, since they expose far less surface area — grind only what you are about to use.
Safety and Contraindications
Chaga is high in oxalates. This is the single most important caution with it: Chaga is not recommended for anyone with a history of kidney stones or kidney disease, and there are documented cases of kidney injury associated with heavy, prolonged use. Moderate intake and periodic breaks are sensible rather than continuous high consumption.Chaga may also affect blood sugar and blood clotting, so it may interact with diabetes medication, anticoagulants and antiplatelet drugs. As an immune-modulating mushroom it may interact with immunosuppressants, and anyone with an autoimmune condition should speak with their doctor first. Discontinue before scheduled surgery.
