Why turkey tail is a decoction, not a food. Turkey tail is a tough, leathery bracket fungus rather than a soft-fleshed mushroom — it cannot be eaten and does not give up its compounds to a quick infusion. The traditional preparation is a 45–90 minute simmer, which produces a mild, earthy, faintly woody drink much lighter than reishi and without its bitterness. Identifying the real thing. Genuine turkey tail shows distinct concentric bands of contrasting colour, a velvety upper surface, and — the definitive check — a pored underside with tiny visible pores. The common look-alike, false turkey tail (Stereum ostrea), has a smooth underside with no pores; it is not toxic but carries none of the compounds turkey tail is valued for.

Before you start. Turkey tail is generally well tolerated, with mild digestive upset the most commonly reported effect. It is immune-modulating, so anyone with an autoimmune condition should speak with their doctor first, and it may interact with immunosuppressant medication and affect blood clotting.
