How to Prepare Sea Moss Gel
Sea moss (Chondrus crispus) is almost always used as a gel rather than eaten dry, and making it is straightforward.Rinse the dried sea moss thoroughly under cold running water to remove sea salt and any sand — this takes longer than you expect, and skipping it leaves the gel unpleasantly salty. Soak in fresh cold water for 12–24 hours; it will swell to several times its dry volume and soften considerably. Drain, rinse again, then blend with fresh water — roughly 1 part soaked moss to 1–2 parts water — until completely smooth. Refrigerate, and it sets into a firm gel within a few hours.
Use 1–2 tablespoons daily. The gel is close to flavourless, which is its practical advantage: it blends into smoothies, soups, sauces, porridge and baked goods without altering the taste, and works as a natural thickener.
Storage and Shelf Life
Dried sea moss keeps for a year or more in a sealed container in a cool, dry place. Prepared gel is a different matter — it is a fresh, water-based food with no preservative, and keeps refrigerated for around 2–3 weeks. It also freezes well, and freezing in an ice-cube tray gives convenient single portions.Discard the gel at any sign of mould, a sour or off smell, or a change in texture from firm to watery. Iodine — the Most Important Consideration

Sustained high intake can cause hyperthyroidism or, paradoxically, hypothyroidism, and can trigger thyroid problems in susceptible people.
If you have any thyroid condition — Hashimoto's, Graves' disease, nodules, or a history of thyroid surgery — speak with your doctor before using sea moss, and do not treat it as a general wellness food. The same applies if you take thyroid medication such as levothyroxine. Moderate intake with periodic breaks is more sensible than large daily amounts indefinitely.
You may also see sea moss marketed as containing "92 of the body's 102 minerals". This figure is widely repeated but has no sound scientific basis, and we would rather not repeat it. Sea moss is genuinely a useful source of iodine, along with some calcium, magnesium, potassium and iron — that is a fair description, and enough on its own.
Safety and Contraindications
Beyond iodine, sea moss is generally well tolerated. It is high in soluble fibre, so introducing large amounts suddenly can cause bloating or digestive upset — build up gradually.Seaweeds can accumulate heavy metals from the water they grow in, so harvest-site quality matters; buy from a source that tests its material. Sea moss may also have a mild blood-thinning effect and can interact with anticoagulant medication.
